Ranch Chicken Tenders
Apple-Walnut Spinach SaladIngredients
- ⅔ cup panko breadcrumbs
- 1 Tbsp Ranch dressing mix
- ¼ cup all-purpose flour
- 1 large egg
- ¾ lb chicken tenderloins (see Note)
- ¼ cup Ranch dressing
Instructions
- Preheat oven to 400°F. Coat a rimmed baking sheet with cooking spray.
- Combine panko and Ranch mix in a shallow bowl. Place flour in a second bowl. Beat egg lightly in a third bowl.
- Dip chicken in flour, then dip in egg mixture, letting excess drip off. Dredge chicken in panko mixture, pressing to adhere. Place coated chicken on a prepared baking sheet. Coat chicken with cooking spray.
- Bake 15 minutes or until chicken is done. Serve with Ranch dressing for dipping.
Side Dish Ingredients
- 2 cups spinach
- 1 Honeycrisp apple, sliced
- 2 Tbsp chopped walnuts
- 2 Tbsp Champagne vinaigrette (or use olive oil vinaigrette)
Side Dish Instructions
- Toss together all ingredients in a bowl.
