Pork with Creamed Corn Sauce

Ingredients

  • 1 (1-lb) pork tenderloin
  • ½ Tbsp Montreal steak seasoning
  • 2 Tbsp butter, divided
  • 1 ear corn, kernels removed
  • ⅓ cup heavy cream
  • ½ Tbsp Dijon mustard
  • ½ Tbsp chopped fresh dill

Instructions

  1. Preheat oven to 400°F. Sprinkle pork with seasoning. Melt 1 Tbsp butter in a large nonstick skillet over medium heat. Add pork and cook, 4 to 5 minutes per side or until browned. Remove from skillet, and trasnsfer to a rimmed baking sheet.
  2. Bake 12 minutes or until a thermometer registers 145°F.
  3. Meanwhile, melt 1 Tbsp butter in skillet over medium heat; add corn, and cook 2 minutes. Add cream and mustard; bring to a boil, reduce heat, and simmer, stirring occasionally, until sauce is thickened. Stir in dill. Season with salt and pepper to taste.
  4. Slice pork, and serve with sauce.

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 1 (8-oz) pkg green beans

Side Dish Instructions

  1. Cook mashed potatoes according to package directions.
  2. Cook green beans according to package directions. Season with salt and pepper.
