Pork with Creamed Corn Sauce
Mashed Potatoes and Green BeansIngredients
- 1 (1-lb) pork tenderloin
- ½ Tbsp Montreal steak seasoning
- 2 Tbsp butter, divided
- 1 ear corn, kernels removed
- ⅓ cup heavy cream
- ½ Tbsp Dijon mustard
- ½ Tbsp chopped fresh dill
Instructions
- Preheat oven to 400°F. Sprinkle pork with seasoning. Melt 1 Tbsp butter in a large nonstick skillet over medium heat. Add pork and cook, 4 to 5 minutes per side or until browned. Remove from skillet, and trasnsfer to a rimmed baking sheet.
- Bake 12 minutes or until a thermometer registers 145°F.
- Meanwhile, melt 1 Tbsp butter in skillet over medium heat; add corn, and cook 2 minutes. Add cream and mustard; bring to a boil, reduce heat, and simmer, stirring occasionally, until sauce is thickened. Stir in dill. Season with salt and pepper to taste.
- Slice pork, and serve with sauce.

- 1 (8-oz) pkg green beans

- Cook mashed potatoes according to package directions.
- Cook green beans according to package directions. Season with salt and pepper.
