Crispy Cheddar Chicken

Ingredients

  • 10 buttery round crackers
  • ½ cup shredded Cheddar cheese
  • 1 large egg
  • ½ lb boneless, skinless chicken breasts
  • ⅛ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Preheat oven to 425°F. Coat a 9-inch baking dish with cooking spray. Set aside.
  2. Crush crackers in a bowl or zip-top plastic bag or process them in a food processor until crushed. Combine cracker crumbs and cheese in a shallow dish. Beat egg in another shallow dish.
  3. Dip chicken in beaten egg; dredge in cracker mixture. Arrange chicken in dish; sprinkle with garlic powder, salt, and pepper.
  4. Cover with foil; bake 20 minutes. Uncover; bake 5 to 10 minutes longer or until chicken is crisp and done.

Side Dish Ingredients

  • ½ (24-oz) pkg frozen French fries
  • 1 (12-oz) pkg frozen green beans
  • ⅓ cup Ranch dressing
  • ½ tsp dried dill

Side Dish Instructions

  1. Bake French fries and cook green beans according to package directions.
  2. Meanwhile, stir together dressing and dill. Serve with French fries.
