Vegetable Paella

Ingredients

  • 2 cups chopped onion
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 (6-oz) pkg organic yellow rice mix
  • 2 tsp smoked paprika (or use other paprika)
  • 3½ cups vegetable broth
  • 1 pint grape tomatoes, halved
  • 1 (6.5-oz) jar quartered marinated artichoke hearts, drained
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (15-oz) can chickpeas, drained and rinsed
  • 1 (16-oz) pkg frozen sweet peas, thawed
  • 3 Tbsp fresh lemon juice

Instructions

  1. Cook onion, bell pepper, and garlic in hot oil in a large, deep skillet 3 minutes. Add rice and paprika; cook 1 minute. Stir in broth, tomatoes, artichokes, salt, and pepper; bring to a simmer. Reduce heat; cover and cook 15 minutes.
  2. Stir in chickpeas, peas, and lemon juice; cover and cook 12 minutes or until liquid is absorbed.

Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 1 Tbsp olive oil
  • 1 tsp vegan balsamic vinegar
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook broccoli according to package directions. Transfer to a large bowl.
  2. Stir together oil, vinegar, salt, and pepper; drizzle over broccoli, and toss.
