Vegetable Paella
Steamed BroccoliIngredients
- 2 cups chopped onion
- 1 green bell pepper, chopped
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 2 (6-oz) pkg organic yellow rice mix
- 2 tsp smoked paprika (or use other paprika)
- 3½ cups vegetable broth
- 1 pint grape tomatoes, halved
- 1 (6.5-oz) jar quartered marinated artichoke hearts, drained
- ½ tsp salt
- ½ tsp pepper
- 1 (15-oz) can chickpeas, drained and rinsed
- 1 (16-oz) pkg frozen sweet peas, thawed
- 3 Tbsp fresh lemon juice
Instructions
- Cook onion, bell pepper, and garlic in hot oil in a large, deep skillet 3 minutes. Add rice and paprika; cook 1 minute. Stir in broth, tomatoes, artichokes, salt, and pepper; bring to a simmer. Reduce heat; cover and cook 15 minutes.
- Stir in chickpeas, peas, and lemon juice; cover and cook 12 minutes or until liquid is absorbed.
Side Dish Ingredients
- 2 (12-oz) pkg broccoli florets
- 1 Tbsp olive oil
- 1 tsp vegan balsamic vinegar
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook broccoli according to package directions. Transfer to a large bowl.
- Stir together oil, vinegar, salt, and pepper; drizzle over broccoli, and toss.
