Pineapple Fried Rice

Ingredients
- 2 (16-oz) pkg frozen vegan fried rice (see Note)
- 1 (12-oz) pkg frozen shelled edamame
- 2 cloves garlic, minced
- 1 Tbsp ginger paste
- 2 Tbsp dark sesame oil, divided
- 2 cups diced pineapple
- 1 Tbsp low-sodium soy sauce (or use tamari)
- ½ cup dry roasted, unsalted peanuts
Instructions
- Cook fried rice and edamame according to package directions.
- Meanwhile, cook garlic and ginger paste in 1 Tbsp oil in a large skillet over medium heat 1 minute or until fragrant, stirring often. Add pineapple, and cook 5 to 6 minutes or until tender and lightly browned.
- Stir in fried rice, edamame, soy sauce, and 1 Tbsp oil. Cook 2 minutes or until thoroughly heated. Sprinkle with nuts.
Side Dish Ingredients
- 2 (9-oz) pkg frozen vegan vegetable dumplings
- ½ cup vegan Thai sweet red chili sauce
- 2 tsp fresh lime juice
Side Dish Instructions
- Cook dumplings according to package directions.
- Combine red chili sauce and lime juice in a small bowl. Serve dumplings with sauce mixture.
