Pineapple Fried Rice

Vegetable Dumplings with Chili Dipping Sauce

Ingredients

  • 2 (16-oz) pkg frozen vegan fried rice (see Note)
  • 1 (12-oz) pkg frozen shelled edamame
  • 2 cloves garlic, minced
  • 1 Tbsp ginger paste
  • 2 Tbsp dark sesame oil, divided
  • 2 cups diced pineapple
  • 1 Tbsp low-sodium soy sauce (or use tamari)
  • ½ cup dry roasted, unsalted peanuts

Instructions

  1. Cook fried rice and edamame according to package directions.
  2. Meanwhile, cook garlic and ginger paste in 1 Tbsp oil in a large skillet over medium heat 1 minute or until fragrant, stirring often. Add pineapple, and cook 5 to 6 minutes or until tender and lightly browned.
  3. Stir in fried rice, edamame, soy sauce, and 1 Tbsp oil. Cook 2 minutes or until thoroughly heated. Sprinkle with nuts.

Side Dish Ingredients

  • 2 (9-oz) pkg frozen vegan vegetable dumplings
  • ½ cup vegan Thai sweet red chili sauce
  • 2 tsp fresh lime juice

Side Dish Instructions

  1. Cook dumplings according to package directions.
  2. Combine red chili sauce and lime juice in a small bowl. Serve dumplings with sauce mixture.
