Bacon, Avocado, and Egg Salad Wraps
Berry-Spinach SaladIngredients
- 6 large eggs
- ½ avocado, cubed
- 2 Tbsp reduced-fat mayonnaise
- 2 Tbsp lemon juice
- 2 green onions, finely chopped
- ¼ tsp pepper
- ½ cup real bacon bits
- 4 green leaf lettuce leaves, torn
- 4 soft taco-size whole wheat tortillas
Instructions
- Place eggs in a single layer in a saucepan. Add water to cover; bring to a rolling boil.
- Remove from heat; let stand, covered, 15 minutes. Drain. Run eggs under cold water. Peel and coarsely chop eggs.
- Gently combine eggs, avocado, mayonnaise, lemon juice, onions, and pepper; fold in bacon bits.
- Divide lettuce and egg salad among tortillas; roll up to serve.

- 1 (5-oz) pkg baby spinach
- ½ (16-oz) container strawberries, sliced
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- ½ avocado, cubed
