Bacon, Avocado, and Egg Salad Wraps

Ingredients

  • 6 large eggs
  • ½ avocado, cubed
  • 2 Tbsp reduced-fat mayonnaise
  • 2 Tbsp lemon juice
  • 2 green onions, finely chopped
  • ¼ tsp pepper
  • ½ cup real bacon bits
  • 4 green leaf lettuce leaves, torn
  • 4 soft taco-size whole wheat tortillas

Instructions

  1. Place eggs in a single layer in a saucepan. Add water to cover; bring to a rolling boil.
  2. Remove from heat; let stand, covered, 15 minutes. Drain. Run eggs under cold water. Peel and coarsely chop eggs.
  3. Gently combine eggs, avocado, mayonnaise, lemon juice, onions, and pepper; fold in bacon bits.
  4. Divide lettuce and egg salad among tortillas; roll up to serve.

Side Dish Ingredients

  • 1 (5-oz) pkg baby spinach
  • ½ (16-oz) container strawberries, sliced
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • ½ avocado, cubed

Side Dish Instructions

  1. Toss together all ingredients in a serving bowl.
