Honey-Sesame Pork Tenderloin

Ingredients

  • 2 (1-lb) pork tenderloins, trimmed
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup honey
  • ¼ cup low-sodium soy sauce
  • 2 Tbsp sesame oil
  • 1 Tbsp minced garlic
  • 3 Tbsp sesame seeds

Instructions

  1. Preheat oven to 425°F. Place pork on a greased rimmed baking sheet; sprinkle with salt and pepper. Bake 20 to 22 minutes or until a meat thermometer inserted reads 145°F. Let stand 3 minutes before slicing.
  2. Meanwhile, bring honey, soy sauce, oil, garlic, and sesame seeds to a boil in a saucepan; cook 7 minutes or until thickened. Serve sauce with pork.

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 1 (20-oz) pkg frozen sugar snap pea stir-fry vegetables (sugar snap peas, broccoli, green beans, yellow squash, red peppers, carrots, yellow peppers, and water chestnuts)
  • 2 Tbsp olive oil
  • 3 Tbsp low-sodium soy sauce

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook vegetables in hot oil in a large skillet over medium-high heat 7 to 10 minutes or until lightly browned and tender. Stir in soy sauce.
