Ingredients

  • 6 fresh plant-based burger patties
  • 1 onion, sliced
  • ¾ tsp garlic powder
  • 3 Tbsp olive oil, divided
  • 12 slices whole wheat bread
  • 6 slices provolone cheese (or use Swiss)

Instructions

  1. Cook plant-based patties in a large skillet over medium-high heat 4 minutes per side or until done. Drain.
  2. Meanwhile, cook onion and garlic powder in 1 Tbsp hot oil in a skillet over medium-high heat 4 to 5 minutes or until tender.
  3. Divide plant-based patties among 6 slices of bread; top with onion, cheese, and bread slices. Cook sandwiches, in 2 batches, in 1 Tbsp hot oil per batch in same large skillet over medium-high heat 3 to 4 minutes per side or until browned.

Side Dish Ingredients

  • 6 cups arugula
  • 1 pint grape tomatoes
  • ⅓ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
