Simple Arugula Salad

Ingredients
- 6 fresh plant-based burger patties
- 1 onion, sliced
- ¾ tsp garlic powder
- 3 Tbsp olive oil, divided
- 12 slices whole wheat bread
- 6 slices provolone cheese (or use Swiss)
Instructions
- Cook plant-based patties in a large skillet over medium-high heat 4 minutes per side or until done. Drain.
- Meanwhile, cook onion and garlic powder in 1 Tbsp hot oil in a skillet over medium-high heat 4 to 5 minutes or until tender.
- Divide plant-based patties among 6 slices of bread; top with onion, cheese, and bread slices. Cook sandwiches, in 2 batches, in 1 Tbsp hot oil per batch in same large skillet over medium-high heat 3 to 4 minutes per side or until browned.
Side Dish Ingredients
- 6 cups arugula
- 1 pint grape tomatoes
- ⅓ cup olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a bowl.
