Tuna and White Bean Pasta Salad
Apple-Arugula SaladIngredients
- 12 oz whole wheat penne pasta
- ½ cup olive-oil mayonnaise
- ½ cup sour cream
- 2 Tbsp fresh lemon juice
- ¼ cup chopped fresh parsley
- ½ tsp salt
- ½ tsp pepper
- 2 (12-oz) cans chunk light tuna in water, drained
- 1 (15.5-oz) can BPA-free no-salt-added cannellini beans, drained and rinsed
- 2 stalks organic celery, chopped
Instructions
- Cook pasta according to package directions; drain and rinse with cold water.
- Whisk together mayonnaise, sour cream, lemon juice, parsley, salt, and pepper. Add tuna, beans, and celery to pasta.
- Pour dressing over pasta, and toss; chill until ready to serve.
Side Dish Ingredients
- 1 (10-oz) pkg baby arugula
- 3 organic sweet apples, chopped
- 1 Tbsp apple cider vinegar
- 1 Tbsp Dijon mustard
- 1 Tbsp honey
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Combine arugula and apples in a bowl.
- Whisk together vinegar, mustard, honey, oil, salt, and pepper; pour dressing over salad, and toss.
