Tuna and White Bean Pasta Salad

Ingredients

  • 12 oz whole wheat penne pasta
  • ½ cup olive-oil mayonnaise
  • ½ cup sour cream
  • 2 Tbsp fresh lemon juice
  • ¼ cup chopped fresh parsley
  • ½ tsp salt
  • ½ tsp pepper
  • 2 (12-oz) cans chunk light tuna in water, drained
  • 1 (15.5-oz) can BPA-free no-salt-added cannellini beans, drained and rinsed
  • 2 stalks organic celery, chopped

Instructions

  1. Cook pasta according to package directions; drain and rinse with cold water.
  2. Whisk together mayonnaise, sour cream, lemon juice, parsley, salt, and pepper. Add tuna, beans, and celery to pasta.
  3. Pour dressing over pasta, and toss; chill until ready to serve.

Side Dish Ingredients

  • 1 (10-oz) pkg baby arugula
  • 3 organic sweet apples, chopped
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp Dijon mustard
  • 1 Tbsp honey
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Combine arugula and apples in a bowl.
  2. Whisk together vinegar, mustard, honey, oil, salt, and pepper; pour dressing over salad, and toss.
