Cuban Panini
Plantain Chips and Guacamole
Ingredients
- 2 (9-oz) pkg refrigerated lightly seasoned jackfruit
- 1 tsp Mojo rub seasoning
- 6 vegan ciabatta rolls, halved lengthwise
- 1½ Tbsp olive oil
- 6 Tbsp yellow mustard
- ⅓ cup organic dill pickle chips
- 6 slices Swiss cheese
Instructions
- Heat jackfruit according to package directions; stir in seasoning.
- Brush outsides of rolls with oil. Spread mustard on cut sides of rolls. Layer roll bottoms with jackfruit, pickles, and cheese. Cover with roll tops.
- Cook sandwiches, in batches, in a large grill pan over medium heat, pressing sandwiches down using a heavy skillet 2 to 3 minutes per side or until toasted and cheese is melted.
Side Dish Ingredients
- ½ (15-oz) container guacamole
- 1 (5-oz) pkg lightly salted plantain chips
Side Dish Instructions
- Serve guacamole and plantain chips alongside sandwiches.
