Lemon-Dill Two-Bean Orzo

Ingredients

  • 2 lb green beans, trimmed and cut into 2-inch pieces
  • 1 (16-oz) pkg orzo
  • ⅓ cup fresh lemon juice
  • ⅓ cup olive oil
  • 2 Tbsp chopped fresh dill
  • ½ tsp salt
  • ½ tsp pepper
  • 2 (15.5-oz) cans cannellini beans, drained and rinsed
  • ½ small red onion, thinly sliced

Instructions

  1. Cook green beans in boiling water to cover in a large Dutch oven 3 minutes or until tender. Drain, reserving water in pot. Plunge beans into a bowl of ice-cold water. Let stand 1 to 2 minutes; drain.
  2. Return reserved water to a boil; add orzo, and cook according to package directions.
  3. Meanwhile, combine lemon juice, oil, dill, salt, and pepper in a bowl. Add green beans, orzo, cannellini beans, and onion; toss.

Side Dish Ingredients

  • 4 cups 100% apple juice
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • 3 pears, peeled, halved, and cored
  • ¼ cup organic sweetened dried cranberries

Side Dish Instructions

  1. Bring juice, cinnamon, and ginger to a simmer in a large saucepan. Add pears; reduce heat to medium, cover and cook 5 minutes or until tender.
  2. Add cranberries; cook 4 minutes or until cranberries are slightly softened. Cool before serving.
