Lemon-Dill Two-Bean Orzo
Poached PearsIngredients
- 2 lb green beans, trimmed and cut into 2-inch pieces
- 1 (16-oz) pkg orzo
- ⅓ cup fresh lemon juice
- ⅓ cup olive oil
- 2 Tbsp chopped fresh dill
- ½ tsp salt
- ½ tsp pepper
- 2 (15.5-oz) cans cannellini beans, drained and rinsed
- ½ small red onion, thinly sliced
Instructions
- Cook green beans in boiling water to cover in a large Dutch oven 3 minutes or until tender. Drain, reserving water in pot. Plunge beans into a bowl of ice-cold water. Let stand 1 to 2 minutes; drain.
- Return reserved water to a boil; add orzo, and cook according to package directions.
- Meanwhile, combine lemon juice, oil, dill, salt, and pepper in a bowl. Add green beans, orzo, cannellini beans, and onion; toss.

- 4 cups 100% apple juice
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- 3 pears, peeled, halved, and cored
- ¼ cup organic sweetened dried cranberries
Side Dish Instructions
- Bring juice, cinnamon, and ginger to a simmer in a large saucepan. Add pears; reduce heat to medium, cover and cook 5 minutes or until tender.
- Add cranberries; cook 4 minutes or until cranberries are slightly softened. Cool before serving.
