Mushroom-Spinach Pilaf

Ingredients
- 3 (8.8-oz) pouches microwavable brown rice
- 2 (8-oz) pkg sliced cremini mushrooms
- 1 onion, chopped
- 3 Tbsp olive oil
- 3 cloves garlic, minced
- ½ cup low-sodium vegetable broth
- 1 (10-oz) pkg baby spinach
- 1 (5-oz) pkg crumbled blue cheese
Instructions
- Cook rice according to package directions. Meanwhile, cook mushrooms and onion in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned. Add garlic; cook 1 minute.
- Stir in rice and broth; cook 3 to 4 minutes or until broth is almost absorbed. Stir in spinach, cooking until just wilted. Sprinkle with cheese.

- 1 (32-oz) pkg green beans
- 2 Tbsp olive oil
- 1 tsp salt
- ¼ tsp pepper
- 1 large shallot, finely chopped
- 2 Tbsp butter, softened
- 2 tsp chopped fresh thyme
Side Dish Instructions
- Preheat oven to 425°F. Toss together beans, oil, salt, and pepper on a large rimmed baking sheet. Bake 10 to 12 minutes or until crisp-tender.
- Toss together beans, shallot, butter, and thyme in a large bowl.
