Mushroom-Spinach Pilaf

Ingredients

  • 3 (8.8-oz) pouches microwavable brown rice
  • 2 (8-oz) pkg sliced cremini mushrooms
  • 1 onion, chopped
  • 3 Tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup low-sodium vegetable broth
  • 1 (10-oz) pkg baby spinach
  • 1 (5-oz) pkg crumbled blue cheese

Instructions

  1. Cook rice according to package directions. Meanwhile, cook mushrooms and onion in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned. Add garlic; cook 1 minute.
  2. Stir in rice and broth; cook 3 to 4 minutes or until broth is almost absorbed. Stir in spinach, cooking until just wilted. Sprinkle with cheese.

  • 1 (32-oz) pkg green beans
  • 2 Tbsp olive oil
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 large shallot, finely chopped
  • 2 Tbsp butter, softened
  • 2 tsp chopped fresh thyme

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together beans, oil, salt, and pepper on a large rimmed baking sheet. Bake 10 to 12 minutes or until crisp-tender.
  2. Toss together beans, shallot, butter, and thyme in a large bowl.
