Mediterranean Couscous

Ingredients

  • 1 cup vegetable broth
  • ½ tsp grated lemon zest
  • ½ tsp Italian seasoning, crushed
  • ½ lb asparagus spears, cut into 1-inch pieces (about 1½ cups)
  • 1 (14.5-oz) can diced tomatoes, drained
  • ¾ cup uncooked plain couscous

Instructions

  1. Heat the broth, lemon zest, Italian seasoning, asparagus and tomatoes in a 2-qt saucepan over medium-high heat to a boil. Reduce the heat to low and cook for 5 minutes or until the asparagus is tender-crisp.
  2. Stir in the couscous. Cover the saucepan and remove from the heat. Let stand for 5 minutes. Fluff the couscous with a fork. Season to taste.
