Mediterranean Couscous
Ingredients
- 1 cup vegetable broth
- ½ tsp grated lemon zest
- ½ tsp Italian seasoning, crushed
- ½ lb asparagus spears, cut into 1-inch pieces (about 1½ cups)
- 1 (14.5-oz) can diced tomatoes, drained
- ¾ cup uncooked plain couscous
Instructions
- Heat the broth, lemon zest, Italian seasoning, asparagus and tomatoes in a 2-qt saucepan over medium-high heat to a boil. Reduce the heat to low and cook for 5 minutes or until the asparagus is tender-crisp.
- Stir in the couscous. Cover the saucepan and remove from the heat. Let stand for 5 minutes. Fluff the couscous with a fork. Season to taste.
