Sausage Pizza Frittata

Ingredients

  • 12 large eggs
  • ½ cup whole milk
  • ½ cup freshly grated Parmesan cheese
  • ½ tsp salt
  • ½ tsp pepper
  • 1 small onion, finely chopped
  • 1 Tbsp olive oil
  • ½ lb ground Italian sausage, casings removed
  • 1 cup no-sugar-added pasta sauce
  • 1½ cups shredded whole-milk mozzarella cheese
  • Fresh basil leaves (optional)

Instructions

  1. Preheat oven to 350°F. Whisk together eggs, milk, Parmesan, salt, and pepper in a bowl.
  2. Cook onion in hot oil in a large cast-iron or ovenproof skillet over medium heat 5 minutes or until tender.
  3. Add sausage; cook 5 minutes or until browned. Reduce heat; stir in egg mixture.
  4. Transfer skillet to oven. Bake 18 minutes or until almost set.
  5. Preheat broiler. Spread sauce 
over frittata; top with mozzarella.
  6. Broil 2 to 3 minutes or until cheese is browned and sauce is bubbly. Sprinkle with basil, if desired. Reserve extra servings for another meal.

  • 2 Tbsp olive-oil vinaigrette

  1. Combine greens and vinaigrette in a bowl; toss.
