Sausage Pizza Frittata

- 12 large eggs
- ½ cup whole milk
- ½ cup freshly grated Parmesan cheese
- ½ tsp salt
- ½ tsp pepper
- 1 small onion, finely chopped
- 1 Tbsp olive oil
- ½ lb ground Italian sausage, casings removed
- 1 cup no-sugar-added pasta sauce
- 1½ cups shredded whole-milk mozzarella cheese
- Fresh basil leaves (optional)
Instructions
- Preheat oven to 350°F. Whisk together eggs, milk, Parmesan, salt, and pepper in a bowl.
- Cook onion in hot oil in a large cast-iron or ovenproof skillet over medium heat 5 minutes or until tender.
- Add sausage; cook 5 minutes or until browned. Reduce heat; stir in egg mixture.
- Transfer skillet to oven. Bake 18 minutes or until almost set.
- Preheat broiler. Spread sauce over frittata; top with mozzarella.
- Broil 2 to 3 minutes or until cheese is browned and sauce is bubbly. Sprinkle with basil, if desired. Reserve extra servings for another meal.
