Ingredients

  • 6 oz spaghetti
  • 6 slices bacon, chopped
  • 3 Roma tomatoes, chopped
  • ½ (8-oz) block cream cheese, cut into pieces
  • ½ cup chicken broth
  • 2 cups baby spinach

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp. Drain, reserving drippings in skillet.
  3. Add tomatoes, and cook 3 minutes or until softened. Add cream cheese and broth; cook 2 to 3 minutes or until thickened. Season with salt and pepper.
  4. Add pasta and spinach to skillet, tossing to wilt spinach and coat pasta with sauce. Season again with salt and pepper. Sprinkle with bacon.
