Bacon and Leek Crustless Quiches
Ingredients
- 8 slices center cut bacon
- 2 leeks, white and light green parts chopped
- 2 cloves garlic, minced
- 8 large eggs
- 1 Tbsp chopped fresh thyme
- ½ tsp salt
- ½ tsp pepper
- 1 Roma tomato, sliced
Instructions
- Preheat oven to 375°F. Cook bacon in a large skillet over medium heat. Remove bacon, crumble, and set aside, reserving 2 Tbsp drippings in skillet.
- Reduce heat to medium heat. Add leeks to drippings in skillet; cook 6 to 8 minutes or until tender, stirring occasionally. Add garlic; cook 1 minute, stirring frequently. Divide leek mixture among 4 (8-oz) ramekins.
- Whisk together eggs, thyme, salt, and pepper. Pour egg mixture among ramekins; top with crumbled bacon and tomato.
- Place ramekins on a baking sheet. Bake 15 to 20 minutes or until eggs are set. Let stand 5 minutes before serving.
