Bacon and Leek Crustless Quiches

Ingredients

  • 8 slices center cut bacon
  • 2 leeks, white and light green parts chopped
  • 2 cloves garlic, minced
  • 8 large eggs
  • 1 Tbsp chopped fresh thyme
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Roma tomato, sliced

Instructions

  1. Preheat oven to 375°F. Cook bacon in a large skillet over medium heat. Remove bacon, crumble, and set aside, reserving 2 Tbsp drippings in skillet.
  2. Reduce heat to medium heat. Add leeks to drippings in skillet; cook 6 to 8 minutes or until tender, stirring occasionally. Add garlic; cook 1 minute, stirring frequently. Divide leek mixture among 4 (8-oz) ramekins.
  3. Whisk together eggs, thyme, salt, and pepper. Pour egg mixture among ramekins; top with crumbled bacon and tomato.
  4. Place ramekins on a baking sheet. Bake 15 to 20 minutes or until eggs are set. Let stand 5 minutes before serving.
