Italian "Sub" Roll Ups
Cucumber and Carrot SticksIngredients
- 2 cups torn baby spinach
- 2 Tbsp olive oil
- 1 Tbsp red wine vinegar
- ¼ tsp dried oregano
- ¾ lb sliced low-sodium ham
- 3 oz sliced salami
- 1 tomato, thinly sliced
- 1 cup thinly sliced onion
- ¼ cup banana pepper rings
Instructions
- Combine spinach, oil, vinegar, and oregano; toss and set aside.
- Arrange ham slices in 4 stacks. Layer salami, tomato, onion, banana peppers, and spinach onto left side of each ham stack.
- Starting with left side, tightly roll up each stack. Wrap roll ups in parchment paper to secure.
Side Dish Ingredients
- 1 cucumber
- 4 carrots
Side Dish Instructions
- Cut cucumber and carrots into sticks. Serve alongside roll ups.
