Cheesy Horseradish Chicken
Brown Rice and Broccoli
Ingredients
- 2 lb boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- ½ cup mayonnaise
- 1 Tbsp prepared horseradish
- 1½ cups shredded Monterey Jack cheese
Instructions
- Preheat broiler. Sprinkle chicken with salt and pepper. Cook chicken, in batches if necessary, in hot oil in a large cast-iron or ovenproof skillet over medium-high heat 5 minutes per side. Return all chicken to pan.
- Stir together mayonnaise and horseradish; spread on chicken. Top with cheese. Broil 3 minutes or until cheese melts.

- 3 (3.5-oz) pouches boil-in-bag brown rice
- 2 (12-oz) pkg frozen broccoli florets
- ¼ tsp salt
- ¼ tsp pepper

- Cook rice and broccoli separately according to package directions.
- Sprinkle broccoli with salt and pepper.
