Cheesy Horseradish Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ½ cup mayonnaise
  • 1 Tbsp prepared horseradish
  • 1½ cups shredded Monterey Jack cheese

Instructions

  1. Preheat broiler. Sprinkle chicken with salt and pepper. Cook chicken, in batches if necessary, in hot oil in a large cast-iron or ovenproof skillet over medium-high heat 5 minutes per side. Return all chicken to pan.
  2. Stir together mayonnaise and horseradish; spread on chicken. Top with cheese. Broil 3 minutes or until cheese melts.

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 2 (12-oz) pkg frozen broccoli florets
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook rice and broccoli separately according to package directions.
  2. Sprinkle broccoli with salt and pepper.
