Chipotle-Lime Chicken

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • 1 tsp ground chipotle chile pepper
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • 1 onion, diced
  • 2 Tbsp olive oil
  • 3 Tbsp lime juice

Instructions

  1. Sprinkle chicken with ground chipotle, garlic powder, salt, and pepper.
  2. Cook chicken and onion in hot oil in a large skillet over medium-high heat 5 minutes per side for the chicken or until done. Stir in lime juice.

  • 1 (12-oz) pkg frozen corn kernels
  • 2 Tbsp olive oil
  • 1 (15-oz) black beans, drained and rinsed
  • ½ tsp ground cumin
  • ½ tsp salt
  • 2 green onions, sliced

Side Dish Instructions

  1. Cook corn in hot oil in a large skillet over medium-high heat 8 minutes. Stir in beans, cumin, and salt; cook 3 minutes or until thoroughly heated. Sprinkle with onions.
