Chipotle-Lime Chicken
Charred Corn and Black BeansIngredients
- 2 lb boneless, skinless chicken thighs
- 1 tsp ground chipotle chile pepper
- ¾ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- 1 onion, diced
- 2 Tbsp olive oil
- 3 Tbsp lime juice
Instructions
- Sprinkle chicken with ground chipotle, garlic powder, salt, and pepper.
- Cook chicken and onion in hot oil in a large skillet over medium-high heat 5 minutes per side for the chicken or until done. Stir in lime juice.

- 1 (12-oz) pkg frozen corn kernels
- 2 Tbsp olive oil
- 1 (15-oz) black beans, drained and rinsed
- ½ tsp ground cumin
- ½ tsp salt
- 2 green onions, sliced
Side Dish Instructions
- Cook corn in hot oil in a large skillet over medium-high heat 8 minutes. Stir in beans, cumin, and salt; cook 3 minutes or until thoroughly heated. Sprinkle with onions.
