Tomato and Mushroom Ravioli
Ingredients
- 1 (18-oz) pkg spinach and ricotta ravioli (or use other ravioli)
- 1 (16-oz) pkg sliced mushrooms
- 2 Tbsp olive oil
- 1 (14.5-oz) can diced tomatoes with Italian herbs
- 1½ cups marinara sauce
- 1 cup grated Parmesan cheese
- ¼ cup capers
- 1 Tbsp butter
- ½ cup panko breadcrumbs
- ¼ tsp salt
- 1½ tsp Italian seasoning
Instructions
- Cook ravioli according to package directions.
- Meanwhile, cook mushrooms in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned. Add tomatoes, marinara sauce, cheese, and capers; cook 5 minutes or until thickened.
- Melt butter in a skillet over medium-high heat. Add breadcrumbs, salt, and Italian seasoning; cook 3 minutes or until golden.
- Combine ravioli and mushroom mixture; sprinkle with breadcrumbs.
