Tomato and Mushroom Ravioli

Ingredients

  • 1 (18-oz) pkg spinach and ricotta ravioli (or use other ravioli)
  • 1 (16-oz) pkg sliced mushrooms
  • 2 Tbsp olive oil
  • 1 (14.5-oz) can diced tomatoes with Italian herbs
  • 1½ cups marinara sauce
  • 1 cup grated Parmesan cheese
  • ¼ cup capers
  • 1 Tbsp butter
  • ½ cup panko breadcrumbs
  • ¼ tsp salt
  • 1½ tsp Italian seasoning

Instructions

  1. Cook ravioli according to package directions.
  2. Meanwhile, cook mushrooms in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned. Add tomatoes, marinara sauce, cheese, and capers; cook 5 minutes or until thickened.
  3. Melt butter in a skillet over medium-high heat. Add breadcrumbs, salt, and Italian seasoning; cook 3 minutes or until golden.
  4. Combine ravioli and mushroom mixture; sprinkle with breadcrumbs.
