Spicy Smoked Sausage and Greens
Creamy GritsIngredients
- ½ (16-oz) pkg smoked pork sausage, cut into 2-inch pieces
- ½ (16-oz) pkg chopped collard greens
- ½ onion, chopped
- 1 small jalapeño pepper, seeded and chopped
- 1 cup low-sodium chicken broth
- ½ tsp sugar
- ⅛ tsp salt
- ⅛ tsp crushed red pepper
- Red wine vinegar (optional)
Instructions
- Combine sausage, collard greens, onion, jalapeño, broth, sugar, salt, and red pepper in a 3- to 4-quart slow cooker.
- Cover and cook on LOW 7 hours or until greens are tender. Serve over Creamy Grits recipe; drizzle with vinegar, if desired.
Side Dish Ingredients
- 1½ cups milk
- 1½ cups water
- ¾ cup uncooked quick-cooking grits
- 1½ Tbsp butter
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Bring milk and water to a boil in a saucepan; slowly whisk in grits. Reduce heat, and simmer, stirring frequently, until thickened.
- Remove from heat; stir in butter, salt, and pepper.
