Spicy Smoked Sausage and Greens

Ingredients

  • ½ (16-oz) pkg smoked pork sausage, cut into 2-inch pieces
  • ½ (16-oz) pkg chopped collard greens
  • ½ onion, chopped
  • 1 small jalapeño pepper, seeded and chopped
  • 1 cup low-sodium chicken broth
  • ½ tsp sugar
  • ⅛ tsp salt
  • ⅛ tsp crushed red pepper
  • Red wine vinegar (optional)

Instructions

  1. Combine sausage, collard greens, onion, jalapeño, broth, sugar, salt, and red pepper in a 3- to 4-quart slow cooker.
  2. Cover and cook on LOW 7 hours or until greens are tender. Serve over Creamy Grits recipe; drizzle with vinegar, if desired.

  • 1½ cups milk
  • 1½ cups water
  • ¾ cup uncooked quick-cooking grits
  • 1½ Tbsp butter
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Bring milk and water to a boil in a saucepan; slowly whisk in grits. Reduce heat, and simmer, stirring frequently, until thickened.
  2. Remove from heat; stir in butter, salt, and pepper.
