Fragrant Couscous with Chicken
Toasted Pita and Garlic HummusIngredients
- ½ cup Israeli (pearl) couscous (preferably whole wheat)
- 3 Tbsp golden raisins (or use chopped dried apricots)
- Pinch of ground cinnamon
- ⅓ cup chopped onion
- 1 tsp olive oil
- 1 cup chopped rotisserie chicken
- 2 Tbsp chopped fresh flat-leaf parsley
- 2 Tbsp refrigerated lemon vinaigrette
- 1 (5-oz) pkg baby arugula
Instructions
- Cook couscous according to package directions, adding raisins during last 2 minutes of cooking. Stir in cinnamon.
- Sauté onion in hot oil in a skillet over medium-high heat 4 to 5 minutes or until golden. Add chicken; cook 1 minute or until thoroughly heated.
- Toss together couscous, chicken mixture, parsley, and vinaigrette. Serve over arugula.

- 1 small whole wheat pita bread round
- ¼ cup roasted garlic hummus
Side Dish Instructions
- Spray pita lightly with olive oil cooking spray. Toast pita in a hot skillet or 425°F oven 1 to 2 minutes per side. Tear in wedges, and serve with hummus.
