Fragrant Couscous with Chicken

Toasted Pita and Garlic Hummus

Ingredients

  • ½ cup Israeli (pearl) couscous (preferably whole wheat)
  • 3 Tbsp golden raisins (or use chopped dried apricots)
  • Pinch of ground cinnamon
  • ⅓ cup chopped onion
  • 1 tsp olive oil
  • 1 cup chopped rotisserie chicken
  • 2 Tbsp chopped fresh flat-leaf parsley
  • 2 Tbsp refrigerated lemon vinaigrette
  • 1 (5-oz) pkg baby arugula

Instructions

  1. Cook couscous according to package directions, adding raisins during last 2 minutes of cooking. Stir in cinnamon.
  2. Sauté onion in hot oil in a skillet over medium-high heat 4 to 5 minutes or until golden. Add chicken; cook 1 minute or until thoroughly heated.
  3. Toss together couscous, chicken mixture, parsley, and vinaigrette. Serve over arugula.

  • 1 small whole wheat pita bread round
  • ¼ cup roasted garlic hummus

Side Dish Instructions

  1. Spray pita lightly with olive oil cooking spray. Toast pita in a hot skillet or 425°F oven 1 to 2 minutes per side. Tear in wedges, and serve with hummus.
