Lemon-Dill Pan-Seared Fish

Heirloom Tomato-Basil Salad

Ingredients

  • 6 flounder fillets (or use other flaky white fish)
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ cup avocado oil
  • ½ cup avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)
  • 3 Tbsp chopped fresh dill
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp capers, chopped
  • 1 clove garlic, minced

Instructions

  1. Sprinkle both sides of fish with salt and pepper. Cook fish, in 2 batches, in 2 Tbsp hot oil per batch in a large skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork.
  2. Stir together mayonnaise, dill, lemon juice, capers, and garlic. Serve mayonnaise mixture with fish.

Side Dish Ingredients

  • 6 large heirloom tomatoes, sliced
  • ¼ cup torn fresh basil
  • ¼ cup extra virgin olive oil
  • 2 Tbsp red wine vinegar

Side Dish Instructions

  1. Arrange tomatoes on a large platter; sprinkle with basil.
  2. Drizzle oil and vinegar over tomatoes; sprinkle with desired amount of kosher salt and pepper.
