Lemon-Dill Pan-Seared Fish
Heirloom Tomato-Basil Salad
Ingredients
- 6 flounder fillets (or use other flaky white fish)
- ½ tsp salt
- ¼ tsp pepper
- ¼ cup avocado oil
- ½ cup avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)
- 3 Tbsp chopped fresh dill
- 2 Tbsp fresh lemon juice
- 2 Tbsp capers, chopped
- 1 clove garlic, minced
Instructions
- Sprinkle both sides of fish with salt and pepper. Cook fish, in 2 batches, in 2 Tbsp hot oil per batch in a large skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork.
- Stir together mayonnaise, dill, lemon juice, capers, and garlic. Serve mayonnaise mixture with fish.
Side Dish Ingredients
- 6 large heirloom tomatoes, sliced
- ¼ cup torn fresh basil
- ¼ cup extra virgin olive oil
- 2 Tbsp red wine vinegar
Side Dish Instructions
- Arrange tomatoes on a large platter; sprinkle with basil.
- Drizzle oil and vinegar over tomatoes; sprinkle with desired amount of kosher salt and pepper.
