Greek Chicken Flatbreads
Romaine and Tomato SaladIngredients
- ¼ cup sliced red onion
- 1 Tbsp olive oil, divided
- ½ cup sliced roasted red peppers, drained
- 2 herb flatbreads or naan
- ½ cup tzatziki dip
- 1 cup shredded rotisserie chicken
- ½ cup crumbled feta cheese
- 3 Tbsp chopped kalamata olives
Instructions
- Preheat broiler. Cook onion in ½ Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned and tender. Add peppers; cook 2 minutes or until thoroughly heated.
- Meanwhile, arrange flatbreads on a baking sheet; brush with ½ Tbsp oil. Broil 2 minutes or until toasted.
- Spread tzatziki on flatbreads. Divide chicken, vegetable mixture, cheese, and olives between flatbreads.
Side Dish Ingredients
- 3 cups chopped romaine lettuce
- 1 Roma tomato, chopped
- 3 Tbsp olive oil vinaigrette (or use Greek dressing)

- Toss together all ingredients in a bowl.
