Greek Chicken Flatbreads

Romaine and Tomato Salad

Ingredients

  • ¼ cup sliced red onion
  • 1 Tbsp olive oil, divided
  • ½ cup sliced roasted red peppers, drained
  • 2 herb flatbreads or naan
  • ½ cup tzatziki dip
  • 1 cup shredded rotisserie chicken
  • ½ cup crumbled feta cheese
  • 3 Tbsp chopped kalamata olives

Instructions

  1. Preheat broiler. Cook onion in ½ Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned and tender. Add peppers; cook 2 minutes or until thoroughly heated.
  2. Meanwhile, arrange flatbreads on a baking sheet; brush with ½ Tbsp oil. Broil 2 minutes or until toasted.
  3. Spread tzatziki on flatbreads. Divide chicken, vegetable mixture, cheese, and olives between flatbreads.

Side Dish Ingredients

  • 3 cups chopped romaine lettuce
  • 1 Roma tomato, chopped
  • 3 Tbsp olive oil vinaigrette (or use Greek dressing)

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
