Apple, Brie, and Prosciutto Panini

Ingredients

  • 1 (16-oz) loaf ciabatta bread (see Note)
  • 3 Tbsp olive oil
  • 1 (6-oz) pkg sliced prosciutto
  • 2 Granny Smith apples, thinly sliced
  • 6 oz Brie cheese, sliced
  • 2 Tbsp pure maple syrup (or use honey)
  • ½ tsp freshly ground pepper

Instructions

  1. Cut bread into 6 rectangles; cut each in half lengthwise. Brush outsides of each ciabatta piece with oil.
  2. Layer 6 ciabatta pieces, cut sides up, with prosciutto, apple slices, and cheese; brush with syrup, and sprinkle with pepper. Top with remaining ciabatta pieces, cut sides down.
  3. Cook sandwiches in a large grill pan over medium heat, pressing sandwiches down using a heavy skillet, 2 to 3 minutes per side or until toasted. Or use a panini press.

Side Dish Ingredients

  • 2 (5-oz) pkg spring mix
  • ⅓ cup olive oil vinaigrette
  • ½ cup sweetened dried cranberries

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
