Apple, Brie, and Prosciutto Panini
Cranberry Mixed GreensIngredients
- 1 (16-oz) loaf ciabatta bread (see Note)
- 3 Tbsp olive oil
- 1 (6-oz) pkg sliced prosciutto
- 2 Granny Smith apples, thinly sliced
- 6 oz Brie cheese, sliced
- 2 Tbsp pure maple syrup (or use honey)
- ½ tsp freshly ground pepper
Instructions
- Cut bread into 6 rectangles; cut each in half lengthwise. Brush outsides of each ciabatta piece with oil.
- Layer 6 ciabatta pieces, cut sides up, with prosciutto, apple slices, and cheese; brush with syrup, and sprinkle with pepper. Top with remaining ciabatta pieces, cut sides down.
- Cook sandwiches in a large grill pan over medium heat, pressing sandwiches down using a heavy skillet, 2 to 3 minutes per side or until toasted. Or use a panini press.

- 2 (5-oz) pkg spring mix
- ⅓ cup olive oil vinaigrette
- ½ cup sweetened dried cranberries
Side Dish Instructions
- Toss together all ingredients in a large bowl.
