Hearty Cheesy and Broccoli Pasta Bake
Italian Salad
Ingredients
- 2 fresh plant-based burger patties, crumbled
- 4 oz ziti pasta
- ½ (12-oz) pkg broccoli florets
- 1 cup marinara sauce
- ½ (14.5-oz) can diced tomatoes, drained
- 1 cup low-sodium chicken broth
- 1 cup water
- 1 clove garlic, minced
- ¼ tsp pepper
- ½ cup shredded sharp Cheddar cheese
- 2 Tbsp sliced fresh basil
Instructions
- Cook plant-based patties in a large skillet over medium heat until browned and crumbly; drain and transfer to a 3- to 4-quart slow cooker.
- Stir in pasta, broccoli, marinara sauce, tomatoes, broth, water, garlic, and pepper. Sprinkle with cheese.
- Cover and cook on LOW 5 hours or until pasta is tender. Sprinkle with basil.

- 1 Tbsp olive oil
- 1½ tsp red wine vinegar
- ¼ tsp dried oregano
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ (10-oz) pkg chopped romaine lettuce
- 1 Roma tomato, thinly sliced
- ½ cucumber, thinly sliced
Side Dish Instructions
- Whisk together oil, vinegar, oregano, salt, and pepper in a bowl. Add lettuce, tomatoes, and cucumber; toss.
