Mushroom and Sausage Toasted Gnocchi

Ingredients
- 6 Tbsp butter
- 2 (9-oz) pkg refrigerated gnocchi
- 2 tsp Italian seasoning
- ¾ cup freshly grated Parmesan cheese, divided
- 1½ lb ground Italian pork sausage
- 1 (16-oz) pkg sliced mushrooms
- 2 (14.5-oz) cans no-salt-added diced tomatoes
Instructions
- Melt butter in a large skillet over medium-high heat. Add gnocchi, spreading in a single layer. Cook 10 minutes or until toasted. Toss with Italian seasoning and ¼ cup cheese.
- Meanwhile, cook sausage and mushrooms in a large skillet over medium-high heat 8 minutes or until sausage and mushrooms are browned.
- Add tomatoes; cook 5 minutes or until mixture is thickened and sausage is done. Sprinkle with ½ cup cheese. Serve over gnocchi.
