Pumpkin Pancakes

Ingredients

  • 2 cups pancake mix
  • 2 cups water
  • 2 Tbsp vegetable oil (or use 2 Tbsp melted butter)
  • 1 cup pumpkin puree
  • 2 Tbsp sugar
  • ½ tsp ground cinnamon
  • 1 (24-oz) bottle pancake syrup
  • 2 Tbsp butter
  • 1 (11-oz) pkg granola

Instructions

  1. Stir together pancake mix, water, and oil in a bowl. Stir in pumpkin, sugar, and cinnamon until blended.
  2. For each pancake, drop batter by ¼ cupfuls onto a greased, hot griddle. Cook until bubbles form on top and edges look dry. Turn and cook 1 minute or until golden brown.
  3. Serve pancakes with syrup and butter. Sprinkle with granola.

Side Dish Ingredients

  • 1 (14-oz) pkg little smokies sausages
  • 1 lb seedless grapes

Side Dish Instructions

  1. Cook sausages in a large skillet over medium heat 10 minutes or until thoroughly heated.
  2. Serve with grapes.
