Lemon-Bacon Shrimp

Roasted Green Beans and Orzo

Ingredients

  • 10 slices bacon, chopped
  • 1½ lb peeled and deveined, large raw shrimp
  • ⅓ cup all-purpose flour
  • 1 cup chicken broth
  • 3 Tbsp lemon juice

Instructions

  1. Cook bacon in a large skillet over medium-high heat until crisp. Drain, reserving drippings in skillet.
  2. Lightly season shrimp with salt and pepper; place in a large zip-top plastic bag. Add flour; seal bag, and shake to coat.
  3. Cook coated shrimp in hot drippings in skillet over medium-high heat until shrimp are just pink. Add broth and lemon juice; cook 2 minutes. Stir in bacon. Serve over orzo.

  • 2 cups orzo
  • 2 (12-oz) pkg green beans
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 425°F. Cook orzo according to package directions.
  2. Toss together green beans and oil on a rimmed baking sheet. Season lightly with salt and pepper. Bake 15 to 20 minutes or until browned and tender.
