Ingredients

  • 8 slices bacon, chopped
  • 4 carrots, minced
  • 4 celery stalks, minced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 lb ground beef (or use ground chicken or turkey)
  • ½ cup red wine (or use low-sodium beef broth)
  • 1 (28-oz) can San Marzano whole tomatoes
  • ½ tsp pepper
  • ¼ tsp salt
  • ½ cup heavy cream
  • ¼ cup chopped fresh flat-leaf parsley

Instructions

  1. Cook bacon in a Dutch oven over medium heat 6 minutes or until crisp, Remove bacon from pan with a slotted spoon, reserving 3 Tbsp drippings in pan.
  2. Add carrots, celery, onion, and garlic to hot drippings; sauté 6 minutes or until tender. Remove vegetable mixture from pan.
  3. Add beef to pan. Cook until beef is no longer pink, stirring occasionally. Drain, if desired.
  4. Return beef and vegetable mixture to pan; add wine, tomatoes, pepper, and salt. Bring to a simmer; cook 20 to 30 minutes, stirring occasionally.
  5. Add cream; return to a simmer, and cook 10 minutes. Sprinkle with bacon and parsley.

  • 2 (10-oz) pkg frozen riced cauliflower 
  • ¼ cup butter
  • 1 tsp salt
  • 1 tsp pepper

Side Dish Instructions

  1. Cook cauliflower according to package directions. Stir in butter, salt, and pepper.
