Creamy Sausage and Kale Soup
Chopped Caesar Salad
Ingredients
- 1 lb ground Italian pork sausage
- ½ onion, chopped
- 2 stalks celery, sliced
- 4 cloves garlic, minced
- 1 Tbsp olive oil
- 1 (32-oz) carton low-sodium chicken broth
- 1 (14.5-oz) can no-salt-added fire-roasted diced tomatoes
- 1 (13.5-oz) can coconut milk
- ½ tsp crushed red pepper
- 4 cups chopped kale
Instructions
- Brown sausage in a Dutch oven or large saucepan over medium-high heat. Drain and set aside.
- Sauté onion, celery, and garlic in hot oil in same pan 4 minutes or until almost tender. Add broth, tomatoes, coconut milk, red pepper, and cooked sausage. Bring to a simmer, and cook 8 minutes.
- Stir in kale, and simmer 5 minutes or until kale is tender. Season with salt and pepper to taste.
Side Dish Ingredients
- 6 cups chopped romaine lettuce
- 6 Tbsp Caesar dressing
- 6 Tbsp freshly grated Parmesan cheese
Side Dish Instructions
- Toss together all ingredients in a large bowl.
