Sheet Pan Pork Chops

Ingredients

  • 6 (7-oz) bone-in pork chops
  • 3 (8-oz) pkg whole baby portobello mushrooms
  • 7 Tbsp olive oil, divided
  • 4 cloves garlic, thinly sliced
  • 2 Tbsp chopped fresh rosemary
  • 1 tsp salt, divided
  • 1 lb Broccolini, trimmed

Instructions

  1. Preheat oven to 450°F. Toss together pork, mushrooms, 5½ Tbsp oil, garlic, rosemary, and ¾ tsp salt in a large bowl.
  2. Arrange on 2 greased rimmed baking sheets. Bake 10 minutes.
  3. Drizzle Broccolini with 1½ Tbsp oil, and sprinkle with ¼ tsp salt; toss. Divide between pans. Bake 10 minutes longer or until pork chops are done.
