Ingredients
- 2 lb ground beef
- 1 cup no-sugar-added pasta sauce, divided
- ½ cup almond flour
- ½ cup freshly grated Parmesan cheese
- ½ onion, chopped
- ¼ cup chopped fresh parsley
- 2 tsp Italian seasoning
- 1 large egg
Instructions
- Preheat oven to 350°F. Stir together beef, ½ cup pasta sauce, and remaining ingredients in a large bowl. Season lightly with salt and pepper.
- Press mixture into a lightly greased 9-x 5-inch loaf pan; brush with remaining pasta sauce.
- Bake 1 hour and 10 minutes to 1 hour 20 minutes or until no longer pink in center. Let stand 10 minutes before slicing.

- 2 lb thin asparagus, trimmed
- 1 tsp lemon zest
- 3 Tbsp olive oil
- 1 tsp garlic salt
- ¼ tsp pepper
- 3 Tbsp lemon juice
- ¼ cup freshly grated Parmesan cheese
Side Dish Instructions
- Preheat oven to 450°F. Toss together all ingredients except lemon juice and cheese on a rimmed baking sheet; spread asparagus in a single layer.
- Bake 6 to 8 minutes or until asparagus is crisp-tender; drizzle with lemon juice, and sprinkle with cheese.
