Ingredients

  • 2 lb ground beef
  • 1 cup no-sugar-added pasta sauce, divided
  • ½ cup almond flour
  • ½ cup freshly grated Parmesan cheese
  • ½ onion, chopped
  • ¼ cup chopped fresh parsley
  • 2 tsp Italian seasoning
  • 1 large egg

Instructions

  1. Preheat oven to 350°F. Stir together beef, ½ cup pasta sauce, and remaining ingredients in a large bowl. Season lightly with salt and pepper.
  2. Press mixture into a lightly greased 9-x 5-inch loaf pan; brush with remaining pasta sauce.
  3. Bake 1 hour and 10 minutes to 1 hour 20 minutes or until no longer pink in center. Let stand 10 minutes before slicing.

  • 2 lb thin asparagus, trimmed
  • 1 tsp lemon zest
  • 3 Tbsp olive oil
  • 1 tsp garlic salt
  • ¼ tsp pepper
  • 3 Tbsp lemon juice
  • ¼ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients except lemon juice and cheese on a rimmed baking sheet; spread asparagus in a single layer.
  2. Bake 6 to 8 minutes or until asparagus is crisp-tender; drizzle with lemon juice, and sprinkle with cheese.
