Creamy Parmesan-Dill Salmon

Broccoli and Creamed Spinach with Tomatoes

Ingredients

  • 1 lb salmon fillets
  • ⅛ tsp salt
  • ¼ cup sour cream
  • 2 Tbsp mayonnaise
  • ½ tsp dried dill 
  • 2 Tbsp freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 425°F. Place fish in a greased baking dish; sprinkle with salt.
  2. Combine sour cream, mayonnaise, and dill. Spread mixture on fish.
  3. Bake 10 to 12 minutes or until fish flakes with a fork. Remove from oven; sprinkle with cheese.
  4. Increase oven temperature to broil. Broil 1 minute.

Side Dish Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 2 Tbsp canola oil, divided
  • ½ tsp pepper, divided
  • 1 small clove garlic, minced
  • 3 (5-oz) pkg baby spinach
  • 1 Roma tomato, chopped
  • 1 oz ⅓-less-fat cream cheese, cut into small pieces
  • 1½ tsp fresh lemon juice
  • ⅛ tsp salt

Side Dish Instructions

  1. Preheat oven to 425°F. Combine broccoli, 2 Tbsp oil, and ½ tsp pepper on a greased rimmed baking sheet; spread in a single layer. Bake 15 to 20 minutes or until browned and tender.
  2. Meanwhile, sauté garlic in 2 Tbsp hot oil in a large nonstick skillet over medium heat 1 minute or until tender.
  3. Add spinach, 1 pkg at a time; cook 5 minutes or until wilted. Stir in tomatoes.
  4. Add cream cheese, lemon juice, salt, and ½ tsp pepper; stir until combined and creamy.
