Creamy Parmesan-Dill Salmon
Broccoli and Creamed Spinach with Tomatoes
Ingredients
- 1 lb salmon fillets
- ⅛ tsp salt
- ¼ cup sour cream
- 2 Tbsp mayonnaise
- ½ tsp dried dill
- 2 Tbsp freshly grated Parmesan cheese
Instructions
- Preheat oven to 425°F. Place fish in a greased baking dish; sprinkle with salt.
- Combine sour cream, mayonnaise, and dill. Spread mixture on fish.
- Bake 10 to 12 minutes or until fish flakes with a fork. Remove from oven; sprinkle with cheese.
- Increase oven temperature to broil. Broil 1 minute.
Side Dish Ingredients
- 1 (12-oz) pkg broccoli florets
- 2 Tbsp canola oil, divided
- ½ tsp pepper, divided
- 1 small clove garlic, minced
- 3 (5-oz) pkg baby spinach
- 1 Roma tomato, chopped
- 1 oz ⅓-less-fat cream cheese, cut into small pieces
- 1½ tsp fresh lemon juice
- ⅛ tsp salt
Side Dish Instructions
- Preheat oven to 425°F. Combine broccoli, 2 Tbsp oil, and ½ tsp pepper on a greased rimmed baking sheet; spread in a single layer. Bake 15 to 20 minutes or until browned and tender.
- Meanwhile, sauté garlic in 2 Tbsp hot oil in a large nonstick skillet over medium heat 1 minute or until tender.
- Add spinach, 1 pkg at a time; cook 5 minutes or until wilted. Stir in tomatoes.
- Add cream cheese, lemon juice, salt, and ½ tsp pepper; stir until combined and creamy.
