Almond, Chocolate, and Cherry Breakfast Bars

Ingredients

  • 1 cup pitted dates
  • ½ cup dried cherries (or use dried cranberries)
  • ⅓ cup unsweetened baking cocoa
  • ⅓ cup chia seeds
  • 1 tsp pure vanilla extract
  • ⅛ tsp salt
  • 1 cup whole almonds, coarsely chopped

Instructions

  1. Process dates in a food processor until a paste forms and dates clump together.
  2. Add cherries, cocoa, chia seeds, vanilla, and salt; pulse until combined.
  3. Add almonds; pulse until nuts are finely chopped and blended throughout mixture.
  4. Transfer date mixture to a large sheet of wax paper; press into a ½-inch-thick rectangle. Wrap tightly, and chill overnight.
  5. Unwrap; cut into 8 bars. Store any leftover bars in refrigerator up to 3 days.

  • 4 navel oranges, cut into wedges
