Shakshuka (Poached Eggs in Spicy Tomato Sauce)
Warm Whole Wheat Pita Rounds
Ingredients
- ½ (12-oz) pkg sliced bell pepper and onion medley
- ½ tsp smoked paprika
- ½ tsp ground cumin
- 1 Tbsp olive oil
- 1 cup arrabbiata sauce (or use roasted garlic pasta sauce)
- ⅓ cup water
- ½ pint grape tomatoes
- 2 large eggs
Instructions
- Sauté vegetables, paprika, and cumin in hot oil in a nonstick skillet over medium heat 6 minutes or until tender.
- Stir in arrabbiata sauce, water, and tomatoes. Bring to a simmer; cook 5 minutes. Make 2 indentations in tomato mixture using a spoon.
- Crack 1 egg into each indentation. Cover and cook 8 to 10 minutes or until eggs are cooked to desired doneness.

Side Dish Instructions
- Wrap pitas in a moist paper towel. Microwave at HIGH 20 seconds or until thoroughly heated.
