Shakshuka (Poached Eggs in Spicy Tomato Sauce)

Ingredients

  • ½ (12-oz) pkg sliced bell pepper and onion medley
  • ½ tsp smoked paprika
  • ½ tsp ground cumin
  • 1 Tbsp olive oil
  • 1 cup arrabbiata sauce (or use roasted garlic pasta sauce)
  • ⅓ cup water
  • ½ pint grape tomatoes
  • 2 large eggs

Instructions

  1. Sauté vegetables, paprika, and cumin in hot oil in a nonstick skillet over medium heat 6 minutes or until tender.
  2. Stir in arrabbiata sauce, water, and tomatoes. Bring to a simmer; cook 5 minutes. Make 2 indentations in tomato mixture using a spoon.
  3. Crack 1 egg into each indentation. Cover and cook 8 to 10 minutes or until eggs are cooked to desired doneness.

  • 2 vegan whole wheat pita bread rounds

Side Dish Instructions

  1. Wrap pitas in a moist paper towel. Microwave at HIGH 20 seconds or until thoroughly heated.
