Chicken with Blueberry-Balsamic Sauce

Ingredients

  • ¾ lb thin sliced boneless, skinless chicken breasts
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1½ Tbsp olive oil, divided
  • ⅓ cup thinly sliced onion
  • ¾ cup frozen wild blueberries
  • 2½ Tbsp balsamic vinegar
  • 2 Tbsp maple syrup
  • 3 sprigs fresh thyme
  • 2 tsp fresh lemon juice

Instructions

  1. Sprinkle chicken with salt and pepper; cook in ½ Tbsp hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes per side or until done. Remove from skillet, and keep warm.
  2. Heat 1 Tbsp oil in same skillet over medium-high heat; add onion, and cook 5 minutes.
  3. Add blueberries, vinegar, syrup, and thyme. Bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Remove thyme sprigs; stir in lemon juice.
  4. Serve blueberry sauce over chicken.

Side Dish Ingredients

  • ½ cup whole wheat orzo
  • 1 clove garlic, minced
  • 2 tsp olive oil
  • 1 (8-oz) pkg sliced mushrooms
  • ¼ tsp salt
  • ½ tsp pepper
  • 2 Tbsp chopped fresh basil (or use parsley)

Side Dish Instructions

  1. Cook orzo according to package directions; keep warm.
  2. Sauté garlic in hot oil in a nonstick skillet over medium heat 1 minute or until tender; add mushrooms. Sauté 5 minutes or until browned.
  3. Combine orzo, mushrooms, salt, pepper, and basil.
