Chicken with Blistered Tomatoes and Spinach

Ingredients
- 1 (16-oz) pkg orzo
- 1½ lb boneless, skinless chicken breasts, cut into 6 pieces
- ¾ tsp salt
- ½ tsp black pepper
- ½ tsp dried oregano
- 2 Tbsp olive oil
- 2 pints grape tomatoes
- 2 cloves garlic, minced
- ½ tsp crushed red pepper
- 1 (10-oz) pkg baby spinach
- 2 Tbsp chopped fresh basil (or use 2 tsp dried)
- 1 Tbsp lemon juice
Instructions
- Cook orzo according to package directions.
- Meanwhile, rub chicken with salt, black pepper, and oregano. Cook in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done. Remove from skillet, and keep warm.
- Add tomatoes, garlic, and red pepper to drippings in skillet; cook 6 minutes or until tomatoes begin to burst.
- Add spinach; sauté 3 minutes or until wilted. Stir in basil and lemon juice; spoon mixture over chicken, and serve over orzo.
