Chicken with Blistered Tomatoes and Spinach

Ingredients

  • 1 (16-oz) pkg orzo
  • 1½ lb boneless, skinless chicken breasts, cut into 6 pieces
  • ¾ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • 2 Tbsp olive oil
  • 2 pints grape tomatoes
  • 2 cloves garlic, minced
  • ½ tsp crushed red pepper
  • 1 (10-oz) pkg baby spinach
  • 2 Tbsp chopped fresh basil (or use 2 tsp dried)
  • 1 Tbsp lemon juice

Instructions

  1. Cook orzo according to package directions.
  2. Meanwhile, rub chicken with salt, black pepper, and oregano. Cook in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done. Remove from skillet, and keep warm.
  3. Add tomatoes, garlic, and red pepper to drippings in skillet; cook 6 minutes or until tomatoes begin to burst.
  4. Add spinach; sauté 3 minutes or until wilted. Stir in basil and lemon juice; spoon mixture over chicken, and serve over orzo.
