Red Onion Flank Steak

Charred Green Beans and Tomatoes with Mashed Potatoes

Ingredients

  • 1½ lb flank steak
  • ½ tsp salt
  • ½ tsp pepper 
  • 3 Tbsp olive oil
  • 1 red onion, thinly sliced
  • 2 Tbsp minced garlic
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp red wine vinegar

Instructions

  1. Sprinkle steak with salt and pepper. Cook steak in hot oil in a large skillet over medium-high heat 12 minutes or until browned and cooked to desired doneness, turning occasionally. Remove to a cutting board. Thinly slice steak diagonally across the grain.
  2. Add onion and garlic to skillet; cook 4 to 5 minutes or until onion is tender. Return steak to skillet. Add soy sauce and vinegar; cook 2 minutes or until thoroughly heated. .

  • 1 (12-oz) pkg trimmed green beans
  • 1 pint grape tomatoes (use multicolored, if available)
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (32-oz) container refrigerated mashed potatoes

Side Dish Instructions

  1. Preheat broiler. Toss together green beans, tomatoes, and oil on a rimmed baking sheet; spread in a single layer. Sprinkle with salt and pepper.
  2. Broil on second oven rack 5 minutes or until charred, stirring once.
  3. Cook potatoes according to package directions.
