Ingredients
- 1 lb plant-based ground beef
- 3 bell peppers, chopped
- 1 large onion, chopped
- 2 cups frozen corn kernels
- 3 cloves garlic, minced
- 1 (15-oz) can black beans, drained and rinsed
- ⅓ cup water
- 2 Tbsp low-sodium taco seasoning
- 1½ cups shredded Mexican-blend cheese
Instructions
- Cook plant-based beef in a large skillet over medium-high heat 6 to 8 minutes or until crumbly.
- Meanwhile, sauté bell peppers and onion in another large skillet coated with cooking spray over medium-high heat 3 to 4 minutes. Add corn and garlic; cook 4 to 5 minutes.
- Add beans, water, and seasoning; cook 4 to 6 minutes or until thoroughly heated. Stir in plant-based beef. Top with cheese; cover and cook 2 minutes or until cheese melts.
Side Dish Ingredients
- 3 (3.5-oz) pkg boil-in-bag brown rice
- 3 green onions, thinly sliced
- ½ tsp salt
Side Dish Instructions
- Cook rice according to package directions. Stir in onions and salt.
