Ground Beef and Asparagus Stir-Fry

Ingredients
- 1½ lb ground round
- 1 lb asparagus, cut into 1-inch pieces
- 1 (10-oz) pkg shredded carrots
- 4 green onions, thinly sliced
- 1 Tbsp minced garlic
- ¼ cup low-sodium soy sauce
- ¼ cup Sweet Chili Sauce (recipe follows)
- ½ cup thinly sliced fresh basil
Instructions
- Cook beef in a large skillet over medium heat, stirring until browned and crumbly; drain and return to skillet.
- Stir in asparagus, carrots, onions, and garlic; cook, stirring, 2 minutes.
- Stir in soy sauce and ¼ cup Sweet Chili Sauce recipe; cook 3 minutes. Stir in basil.
Side Dish Ingredients
- 1 cup brown rice, rinsed
- 2 (12-oz) pkg broccoli florets
- ½ tsp salt
- ½ tsp pepper
- ⅓ cup pure maple syrup
- ¼ cup apple cider vinegar
- ¼ cup water
- 1 Tbsp minced garlic
- 2 tsp crushed red pepper
- 1 Tbsp arrowroot
- 1 Tbsp water
Side Dish Instructions
- Cook rice according to package directions.
- Microwave broccoli according to package directions; stir in salt and pepper.
- Bring syrup, vinegar, and ¼ cup water to a boil in a small saucepan; add garlic and red pepper. Simmer 2 minutes.
- Mix arrowroot and 1 Tbsp water, stirring to dissolve. Drizzle into chili sauce, stirring until thickened; remove from heat. Use ¼ cup sauce in stir-fry recipe. Store remaining chili sauce in refrigerator up to 1 week.
