Ground Beef and Asparagus Stir-Fry

Brown Rice, Broccoli, and Sweet Chili Sauce

Ingredients

  • 1½ lb ground round
  • 1 lb asparagus, cut into 1-inch pieces
  • 1 (10-oz) pkg shredded carrots
  • 4 green onions, thinly sliced
  • 1 Tbsp minced garlic
  • ¼ cup low-sodium soy sauce
  • ¼ cup Sweet Chili Sauce (recipe follows)
  • ½ cup thinly sliced fresh basil

Instructions

  1. Cook beef in a large skillet over medium heat, stirring until browned and crumbly; drain and return to skillet.
  2. Stir in asparagus, carrots, onions, and garlic; cook, stirring, 2 minutes.
  3. Stir in soy sauce and ¼ cup Sweet Chili Sauce recipe; cook 3 minutes. Stir in basil.

Side Dish Ingredients

  • 1 cup brown rice, rinsed
  • 2 (12-oz) pkg broccoli florets
  • ½ tsp salt
  • ½ tsp pepper
  • ⅓ cup pure maple syrup
  • ¼ cup apple cider vinegar
  • ¼ cup water
  • 1 Tbsp minced garlic
  • 2 tsp crushed red pepper
  • 1 Tbsp arrowroot
  • 1 Tbsp water

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Microwave broccoli according to package directions; stir in salt and pepper.
  3. Bring syrup, vinegar, and ¼ cup water to a boil in a small saucepan; add garlic and red pepper. Simmer 2 minutes.
  4. Mix arrowroot and 1 Tbsp water, stirring to dissolve. Drizzle into chili sauce, stirring until thickened; remove from heat. Use ¼ cup sauce in stir-fry recipe. Store remaining chili sauce in refrigerator up to 1 week.
