Spicy Chipotle Chili

Ingredients
- 1 onion, chopped
- 1½ lb ground round
- 2 Tbsp olive oil
- 1 (28-oz) can BPA-free organic whole tomatoes, undrained and chopped
- 1 (15-oz) can BPA-free organic no-salt-added tomato sauce
- 1 Tbsp chili powder
- 1 tsp ground chipotle chile pepper
- ½ tsp salt
- ¾ tsp pepper
- ½ tsp ground cumin
- ⅓ cup plain Greek yogurt
- 2 Tbsp chopped fresh cilantro
Instructions
- Cook onion and beef in hot oil in a Dutch oven over medium-high heat, stirring occasionally, 10 minutes or until onion is tender and beef is browned.
- Stir in tomatoes, tomato sauce, chili powder, chile pepper, salt, pepper, and cumin. Bring to a boil; reduce heat, and simmer, uncovered, 30 minutes.
- Top each serving with yogurt and cilantro.
Side Dish Ingredients
- 3 Tbsp olive oil
- 4 cloves garlic, minced
- 2 tsp dried oregano
- ½ tsp pepper
- 1 (16-oz) loaf French bread (preferably whole wheat), halved lengthwise
- ¾ cup shredded sharp Cheddar cheese
Side Dish Instructions
- Preheat oven to 400°F. Combine oil, garlic, oregano, and pepper in a small bowl; brush onto cut sides of bread.
- Place bread on a baking sheet; bake 10 minutes or until toasted. Sprinkle with cheese.
- Bake 5 to 6 minutes longer or until cheese is melted.
