Spicy Chipotle Chili

Ingredients

  • 1 onion, chopped
  • 1½ lb ground round
  • 2 Tbsp olive oil
  • 1 (28-oz) can BPA-free organic whole tomatoes, undrained and chopped
  • 1 (15-oz) can BPA-free organic no-salt-added tomato sauce
  • 1 Tbsp chili powder
  • 1 tsp ground chipotle chile pepper
  • ½ tsp salt
  • ¾ tsp pepper
  • ½ tsp ground cumin
  • ⅓ cup plain Greek yogurt
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Cook onion and beef in hot oil in a Dutch oven over medium-high heat, stirring occasionally, 10 minutes or until onion is tender and beef is browned.
  2. Stir in tomatoes, tomato sauce, chili powder, chile pepper, salt, pepper, and cumin. Bring to a boil; reduce heat, and simmer, uncovered, 30 minutes.
  3. Top each serving with yogurt and cilantro.

Side Dish Ingredients

  • 3 Tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • ½ tsp pepper
  • 1 (16-oz) loaf French bread (preferably whole wheat), halved lengthwise
  • ¾ cup shredded sharp Cheddar cheese

Side Dish Instructions

  1. Preheat oven to 400°F. Combine oil, garlic, oregano, and pepper in a small bowl; brush onto cut sides of bread.
  2. Place bread on a baking sheet; bake 10 minutes or until toasted. Sprinkle with cheese.
  3. Bake 5 to 6 minutes longer or until cheese is melted.
