Ingredients
- 1½ lb salmon fillets
- 1 tsp dried basil
- ½ tsp garlic powder
- ¾ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 (8-oz) carton sour cream
- 2 Tbsp olive-oil mayonnaise
- 2 Tbsp prepared horseradish
Instructions
- Sprinkle fillets with basil, garlic powder, salt, and pepper. Cook fish in hot oil in a large skillet over medium heat 5 minutes per side or until fish flakes with a fork.
- Combine sour cream, mayonnaise, and horseradish; serve with fillets.
Side Dish Ingredients
- 1½ cups long-grain brown rice, rinsed
- 3 (10-oz) pkg organic baby spinach
- 2 Tbsp olive oil
- 1 lemon
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook rice according to package directions; keep warm.
- Cook spinach, in batches, in hot oil in a large nonstick skillet over medium heat, stirring until spinach wilts.
- Grate zest from lemon to equal 1 tsp; squeeze juice to equal 2 Tbsp. Stir lemon zest, juice, salt, and pepper into spinach.
