Ingredients

  • 1½ lb salmon fillets
  • 1 tsp dried basil
  • ½ tsp garlic powder
  • ¾ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 (8-oz) carton sour cream
  • 2 Tbsp olive-oil mayonnaise
  • 2 Tbsp prepared horseradish

Instructions

  1. Sprinkle fillets with basil, garlic powder, salt, and pepper. Cook fish in hot oil in a large skillet over medium heat 5 minutes per side or until fish flakes with a fork.
  2. Combine sour cream, mayonnaise, and horseradish; serve with fillets.

Side Dish Ingredients

  • 1½ cups long-grain brown rice, rinsed
  • 3 (10-oz) pkg organic baby spinach
  • 2 Tbsp olive oil
  • 1 lemon
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions; keep warm.
  2. Cook spinach, in batches, in hot oil in a large nonstick skillet over medium heat, stirring until spinach wilts.
  3. Grate zest from lemon to equal 1 tsp; squeeze juice to equal 2 Tbsp. Stir lemon zest, juice, salt, and pepper into spinach.
