Ingredients

  • 1½ lb lean ground beef
  • 2 carrots, shredded
  • 2 organic bell peppers (any color), chopped
  • 1 onion, chopped
  • 1 (6-oz) can BPA-free organic tomato paste
  • ½ cup low-sodium chicken broth
  • 1 tsp apple cider vinegar
  • 1 Tbsp salt-free seasoning blend
  • 1 tsp dry mustard
  • 1 head Bibb lettuce, leaves separated

Instructions

  1. Cook beef, carrots, bell peppers, and onion in a large Dutch oven over medium heat 10 minutes or until beef is browned; drain and set aside.
  2. Add tomato paste, broth, vinegar, seasoning, and mustard. Return beef to Dutch oven; cook 8 minutes or until sauce thickens.
  3. Spoon beef mixture onto Bibb lettuce leaves, and serve as wraps.

Side Dish Ingredients

  • 4 sweet potatoes, cut into wedges
  • 3 Tbsp olive oil
  • 4 tsp chili powder
  • 1 tsp salt
  • 1 tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Combine potatoes, oil, chili powder, salt, and pepper on a rimmed baking sheet.
  2. Bake 20 to 25 minutes, turning once, until potatoes are browned and tender.
