Ingredients
- 1 onion, halved
- 1½ lb lean ground beef
- ¼ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil, divided
- 1 (8-oz) pkg sliced mushrooms
- 1 Tbsp whole wheat flour
- ½ cup low-sodium beef broth
- ¼ cup butter, softened
- ¼ cup olive-oil mayonnaise
- 3 Tbsp Dijon mustard
- 12 slices rye bread
- 6 slices provolone cheese
Instructions
- Chop enough onion to equal ¼ cup. Combine beef, chopped onion, salt, and pepper; shape into 6 patties.
- Cook patties in 1 Tbsp hot oil in a large skillet 4 minutes per side or until no longer pink; remove from skillet.
- Slice remaining onion; add to skillet along with 1 Tbsp oil and mushrooms.
- Sauté 5 minutes or until tender; sprinkle flour over mushrooms, and stir. Stir in broth; cook 1 minute or until thickened.
- Mix together mayonnaise and mustard in a small bowl. Spread butter on one side of each piece of bread; spread mayonnaise mixture on other sides.
- Place 3 bread slices, butter sides down, in a separate skillet.
- Top each with a patty, cheese, mushroom mixture, and 3 bread slices; cook 2 minutes per side. Repeat with remaining ingredients.

- 1½ lb sweet potatoes
- 2 Tbsp olive oil
- ¼ tsp salt
- ½ tsp ground black pepper
- ½ tsp crushed red pepper
Side Dish Instructions
- Preheat oven to 450°F. Cut potatoes lengthwise into ½-inch-thick wedges. Toss with oil, salt, black pepper, and crushed red pepper on a greased baking sheet.
- Bake 30 minutes or until browned and crisp, turning once.
