Ingredients

  • 1 onion, halved
  • 1½ lb lean ground beef
  • ¼ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil, divided
  • 1 (8-oz) pkg sliced mushrooms
  • 1 Tbsp whole wheat flour
  • ½ cup low-sodium beef broth
  • ¼ cup butter, softened
  • ¼ cup olive-oil mayonnaise
  • 3 Tbsp Dijon mustard
  • 12 slices rye bread
  • 6 slices provolone cheese

Instructions

  1. Chop enough onion to equal ¼ cup. Combine beef, chopped onion, salt, and pepper; shape into 6 patties.
  2. Cook patties in 1 Tbsp hot oil in a large skillet 4 minutes per side or until no longer pink; remove from skillet.
  3. Slice remaining onion; add to skillet along with 1 Tbsp oil and mushrooms.
  4. Sauté 5 minutes or until tender; sprinkle flour over mushrooms, and stir. Stir in broth; cook 1 minute or until thickened.
  5. Mix together mayonnaise and mustard in a small bowl. Spread butter on one side of each piece of bread; spread mayonnaise mixture on other sides.
  6. Place 3 bread slices, butter sides down, in a separate skillet.
  7. Top each with a patty, cheese, mushroom mixture, and 3 bread slices; cook 2 minutes per side. Repeat with remaining ingredients.

  • 1½ lb sweet potatoes
  • 2 Tbsp olive oil
  • ¼ tsp salt
  • ½ tsp ground black pepper
  • ½ tsp crushed red pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Cut potatoes lengthwise into ½-inch-thick wedges. Toss with oil, salt, black pepper, and crushed red pepper on a greased baking sheet.
  2. Bake 30 minutes or until browned and crisp, turning once.
