Peanut-Lime Chicken

Ingredients

  • 5 Tbsp vegetable oil, divided
  • 3 Tbsp peanut butter
  • 2 Tbsp lime juice
  • 1 Tbsp brown sugar
  • 1 Tbsp low-sodium soy sauce
  • ⅛ tsp ground ginger
  • 1 clove garlic, minced
  • 1½ lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Whisk together ¼ cup oil, peanut butter, lime juice, sugar, soy sauce, ginger, and garlic in a small bowl.
  2. Pound chicken to an even thickness with the heel of your hand or a meat mallet. Sprinkle chicken with salt and pepper; cook chicken in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
  3. Stir in peanut butter sauce; cook 2 to 3 minutes or until thoroughly heated, turning to coat chicken.

Side Dish Ingredients

  • 3 (3.5-oz) pouches boil-in-bag jasmine rice
  • 1 (10-oz) pkg spinach
  • ½ tsp salt
  • ½ cup chopped fresh cilantro

Side Dish Instructions

  1. Cook rice according to package directions. Stir in spinach and salt until spinach wilts. Sprinkle with cilantro.
