Peanut-Lime Chicken
Spinach and Cilantro RiceIngredients
- 5 Tbsp vegetable oil, divided
- 3 Tbsp peanut butter
- 2 Tbsp lime juice
- 1 Tbsp brown sugar
- 1 Tbsp low-sodium soy sauce
- ⅛ tsp ground ginger
- 1 clove garlic, minced
- 1½ lb boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
Instructions
- Whisk together ¼ cup oil, peanut butter, lime juice, sugar, soy sauce, ginger, and garlic in a small bowl.
- Pound chicken to an even thickness with the heel of your hand or a meat mallet. Sprinkle chicken with salt and pepper; cook chicken in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.
- Stir in peanut butter sauce; cook 2 to 3 minutes or until thoroughly heated, turning to coat chicken.

- 3 (3.5-oz) pouches boil-in-bag jasmine rice
- 1 (10-oz) pkg spinach
- ½ tsp salt
- ½ cup chopped fresh cilantro
Side Dish Instructions
- Cook rice according to package directions. Stir in spinach and salt until spinach wilts. Sprinkle with cilantro.
