Ingredients

  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 2 Tbsp minced garlic
  • 1 (15-oz) can black beans, undrained
  • 1 (15.5-oz) can Great Northern beans, undrained
  • 1 (15.5-oz) can pinto beans, undrained
  • 2 (14.5-oz) cans diced tomatoes
  • 2 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 1 tsp pepper
  • 1 cup shredded Cheddar cheese
  • 1 (8-oz) carton sour cream

Instructions

  1. Cook onion in hot oil in a large Dutch oven over medium-high heat 8 minutes or until lightly browned and tender. Add garlic; cook 1 minute or until tender.
  2. Add beans, tomatoes, chili powder, cumin, and pepper to pot; reduce heat to medium, and cook 25 minutes or until thickened, stirring occasionally. Top with cheese and sour cream.

  1. Bake cornbread mix according to package directions.
