Ingredients

  • 12 oz linguine
  • 1 lb ground pork
  • 1 head bok choy, cut into ½-inch-thick slices
  • 1 (10-oz) pkg shredded carrots
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • ½ cup low-sodium chicken broth
  • ¼ cup low-sodium soy sauce
  • 3 Tbsp rice vinegar
  • 2 Tbsp chili sauce with garlic

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook pork and bok choy in a large skillet over medium heat, stirring until pork is browned and crumbly; drain. Stir in carrots, onions, and garlic; cook 2 minutes.
  3. Whisk together broth, soy sauce, vinegar, and chili sauce; add to pork mixture, and cook 1 minute. Add pasta; toss.
