Barbecue Chicken Stromboli
Apple and Greens Salad
Ingredients
- 1½ lb boneless, skinless chicken thighs, cut into bite-size pieces
- 4 Tbsp butter, melted and divided
- 1 cup barbecue sauce
- 1 (13.8-oz) can refrigerated pizza dough
- 1 (8-oz) block mozzarella cheese, shredded
- ¼ cup sliced red onion
- ¼ cup fresh cilantro leaves
Instructions
- Preheat oven to 375°F. Cook chicken in 2 Tbsp melted butter in a large skillet over medium-high heat 5 to 6 minutes or until done. Stir in barbecue sauce.
- Unroll dough onto a lightly floured surface. Spread chicken mixture over dough, leaving a 1-inch border on all sides. Top with cheese, onion, and cilantro.
- Roll up, jelly-roll fashion, starting with one long side. Place roll on a large, lightly greased baking sheet. Cut slits in top of roll at 1-inch intervals to allow steam to escape. Brush roll with 2 Tbsp melted butter.
- Bake 35 to 45 minutes or until golden brown; let stand 10 minutes before slicing.
Side Dish Ingredients
- 1 head green leaf lettuce, chopped
- 2 apples (preferably a sweet, crisp variety), chopped
- ½ cup olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
