Greek Spinach Grilled Cheese Sandwiches
Balsamic-Oregano Tomatoes
Ingredients
- 2 cups baby spinach, coarsely chopped
- ½ cup shredded part-skim mozzarella cheese
- ½ cup crumbled feta cheese
- ¼ cup olive-oil mayonnaise, divided
- ½ Tbsp chopped fresh oregano (or use 1 tsp dried)
- ¼ tsp crushed red pepper
- 4 slices multigrain bakery bread
- 1½ Tbsp honey, warmed
Instructions
- Combine spinach, both cheeses, 1 Tbsp mayonnaise, oregano, and red pepper in a bowl; stir until blended.
- Top 2 bread slices with cheese mixture; cover with remaining bread slices. Brush outsides of sandwiches with remaining mayonnaise.
- Cook sandwiches in a large nonstick skillet over medium heat 3 to 4 minutes per side or until golden and cheese is melted. Serve sandwiches with honey.
Side Dish Ingredients
- 1 large heirloom tomato, sliced
- 1 Tbsp balsamic vinegar
- ½ Tbsp extra virgin olive oil
- ½ Tbsp chopped fresh oregano
- ¼ tsp pepper
Side Dish Instructions
- Arrange tomato slices on a plate. Drizzle with vinegar and oil; sprinkle with oregano and pepper.
