Greek Spinach Grilled Cheese Sandwiches

Ingredients

  • 2 cups baby spinach, coarsely chopped
  • ½ cup shredded part-skim mozzarella cheese
  • ½ cup crumbled feta cheese
  • ¼ cup olive-oil mayonnaise, divided
  • ½ Tbsp chopped fresh oregano (or use 1 tsp dried)
  • ¼ tsp crushed red pepper
  • 4 slices multigrain bakery bread
  • 1½ Tbsp honey, warmed

Instructions

  1. Combine spinach, both cheeses, 1 Tbsp mayonnaise, oregano, and red pepper in a bowl; stir until blended.
  2. Top 2 bread slices with cheese mixture; cover with remaining bread slices. Brush outsides of sandwiches with remaining mayonnaise.
  3. Cook sandwiches in a large nonstick skillet over medium heat 3 to 4 minutes per side or until golden and cheese is melted. Serve sandwiches with honey.

Side Dish Ingredients

  • 1 large heirloom tomato, sliced
  • 1 Tbsp balsamic vinegar
  • ½ Tbsp extra virgin olive oil
  • ½ Tbsp chopped fresh oregano
  • ¼ tsp pepper

Side Dish Instructions

  1. Arrange tomato slices on a plate. Drizzle with vinegar and oil; sprinkle with oregano and pepper.
